Hard Tack and an Award

This has been a hard week for me in the sense that I feel like I haven't accomplished much. I don't know why, but for some reason I felt like I was fighting every day to accomplish anything outside of school. At least school happened.

I did try making some hard tack this week. My husband thought this would be a good thing to have for backpacking with the boys. It seems like it turned out, but I kind of messed it up when I shaped it so it's not pretty. My husband was impressed though, and I'll probably make more. I know how to fix my mistake so I'll take some pictures for you then.

I made some rolls for a company meal this week. It was a new recipe that only takes 35 minutes from the first ingredient to being put in the oven. It only takes ten minutes to bake so these are super fast. And let me tell you, they are so delicious. You can find the recipe on my Pinterest board under "Food-Bread" or "Completed Projects". They are actually called "30 Minute Rolls", but they really are 35 minutes.

At the beginning of this week we actually had some weather that was nice enough that we went for a walk as a family. It felt so good after the long winter we've had (are still having) to get out as a family and take a walk in the neighbourhood. I love walking. I had the baby on my back in the mai tei carrier, and it felt good to have him cuddled up against my back.

I am very pleased that this week saw the launch of a semi-regular post from my youngest sister on the subject of dressing modestly AND fashionably. The two are mutually exclusive. I look forward to more posts from her. If you missed it you can find her first post here.

The biggest news this week was my oldest daughter winning the short story writing contest at our library. We went to the awards ceremony tonight. We are so proud of her. In case you didn't read her story check out my post here where I put it at the end of the post. It is such a joy to watch our children growing up and beginning to develop their talents and skills. I know someday my daughter will be a published author - she is that good.

Chocolate Macaroons

I mentioned a while ago that I had started making macaroons for my husband so he wouldn't need to buy any when he went through a drive-thru for a coffee. What I came up with isn't the same as what he was buying, but he likes it - that's what's important, right?

I've tweaked the original recipe so that I could make them chocolate and add sweeteners instead of honey. This recipe is easy and comes together quickly. Using my ice cream scoop to shape the cookies I always get exactly thirteen. My oldest daughter believes that each batch needs quality control. She offers to eat the thirteenth to check that the batch is okay for her dad. Don't you love a daughter who is so self-sacrificial. ☺

Coconut Macaroons

3 egg yolks
2 tbsp xylitol
1/4 cup butter - softened
1 egg
1 1/4 tsp almond extract
2 heaping tbsp stevia
1 tbsp cocoa
1 1/2 tsp baking powder
2 3/4 cup finely shredded coconut - unsweetened
1/3 cup almond flour

Beat the egg yolks, xylitol and butter until creamy (about three minutes - I use my stand mixer so I can do other things ☺).
Add the whole egg and beat for another minute. Then add the almond extract, stevia, cocoa, and baking powder. Beat until mixed.
Add the coconut and almond flour and mix by hand or on low speed with your mixer.

I use an ice cream scoop to shape the cookies and put them on a greased baking pan.

Bake them for 7-12 minutes in an 335 degree oven.

I pack the dough down in and smooth it out around the edges. It slides
out of the scoop easily.
I love how they all come out uniform.

Big Plans

One week off of school and I have big plans. I thought I'd share my goals with you to help me get them organized and to keep me accountable.

I want to organize the photos on my camera's SD card which leads me into my next goal of doing LOTS of scrapbooking. I want to try out some new recipes from my friend Sarah's blog -  "Whole and Heavenly Oven". Some of the recipes I'd like to try are..
I need to put away our annual grain order. My husband took a couple of our children and picked up our year's supply of grain on Saturday. They were out of spelt and steel cut oats so we'll have to go backfor those when they come in. Other than that we got hard wheat, quick cook oat flakes, navy beans, black beans and maple syrup. You know you're out in the country when the road sign looks like this...

All of this for less than $600 - That's less than $60 per person for a year's worth of grains.
I may or may not do some sewing. I have a few projects kicking around in my head.

But my biggest goal of all is to potty train my three-year-old. We've talked about this for months trying to prepare him. He's pretty excited right now. We'll see how he is once we actually start.

Do you have any great potty training tips? This is #7 for me, and I'm still dreading it.

Sewing and Cooking Again - Yeah!

It's been a couple of weeks since I posted on a Friday. That's because last Friday I was busy getting ready for my husband's 50th birthday party the next day. We kept it simple, but even simple requires planning and preparation. The party went so wonderfully. My husband said it was the best birthday he had ever had.

This week has been so nice to get back to a normal routine. Healthy family and no parties to plan for. I've been able to do extra work in the kitchen and some sewing.

My middle daughter had a birthday as well recently. She wanted a cape. I found a pattern online. I went to the dollar store and bought a fleece blanket for $3. I had flannel left over from another sewing project for lining the hood. I used this pattern and it went very smoothly. My daughter was thrilled with her cape.

In the kitchen I made roasted chick peas for a diet snack. It's nice to have something savory and crunchy. As well, I made up some instant oatmeal. You know the packets you get at the store? Well, I followed these instructions and made up some homemade instant oatmeal. Now if we need a quick breakfast for someone or snack (I love oatmeal so much I would eat it as a snack), we have it. We can add fruit to it as desired or not. I didn't not package it individually. I put it in a big glass jar with the instructions for how to make a serving written on the lid with a sharpie. Finally I made some apple oat cakes that are also diet and tasted so good.

Last week I made a birthday gift for a little boy in our church. Ever since I saw the pattern for a pillow shaped like a shield I knew I had to make it for someone. Isaiah is the fourth of five boys. I'm sure he can use something for defense. ☺

Today I finally figured out how to make a cloth cover for a small box that we use for toys in our living room. I want to cover it in fabric that matches our curtains just to dress it up a little since it's in our living room. For weeks I've puzzled over how to do this so I could remove it to wash it if necessary. In the middle of reading a book to my children I had a brainstorm about how to do this. It's funny how your brain can handle two things at once...reading to the children and thinking again, "How can I cover that box?". I hope to do it soon and make a tutorial.

How did your week go? Do you ever think of ever things while reading a book to your children?

On Being a Trim Healthy Mama

Finally we all seem to be well again. Last week was spent preparing for my husband's 50th birthday. We had a great party for him Saturday night. Now my life can hopefully resume it's normal craziness instead of the crazy craziness.

I've been getting quite a few questions lately about the Trim Healthy Mama diet so I thought I would take a post to explain how it works. I was so done with diets before I bought the book. I was so afraid this would be another diet I would follow for a while and then hate. However, I soon found it has got to be the simplest, most delicious diet I have ever followed. I've stayed with it more or less for almost a year now which is a record for me.

It's based on two simple principles. First, have some form of protein with every snack or meal you eat. That can be as simple as a teaspoon of peanut butter spread on half of an apple. Or it can be as big as having steak and salad for supper. This was easy for me to grasp because I love meat. A diet that doesn't include meat just isn't going to work for me. I also loves eggs for breakfast so I didn't have to make a huge change in my breakfast - big bonus.

Secondly, our bodies run on two types of fuel - fats and carbohydrates. Never mix the two. This does not mean you can't have butter and pancakes. It does mean you have to change the ingredients in your pancakes. There are many recipes for pancakes made with almond flour and/or coconut flour. Almonds and coconuts are high in fat so obviously the flour made from them is as well. So you could have a breakfast of almond flour pancakes, eggs and bacon. Skip the maple syrup and top your pancakes with berries and whip cream or yogurt or cottage cheese. You won't feel deprived, trust me.

For supper you could have lean chicken breast cut into bite-size pieces and rolled in oat flour (you can make this in a coffee grinder with regular oatmeal) and garlic salt and baked in the oven. Add a salad with low-fat dressing and a sweet potato topped with laughing cow cheese and you'll be laughing. You've just had a delicious high carbohydrate meal.

At first it takes a little effort to think through your menu and figure out how to tweak it so that you are not mixing fats and carbohydrates but before long it will be second nature. Allow three meals between fuel types. So if your breakfast was high fat you can change to carbs for lunch if it's been three hours.

Sometimes I can't go between meals without snacking - the joys of being a nursing mom. Then I have a snack that's low in fat and carbohydrates so that it doesn't matter what I've just finished or what I'm going to have next. For me  that's usually a protein shake made with almond milk.

The book lists several "special" foods, but many are easy to obtain and some of the more "exotic" ones you can get along without if you don't want to get them. My shopping list has changed very little. I do highly recommend that you get the book. It includes the science behind why this diet works, scriptural reasons for using this diet, food lists and menu ideas, hundreds of recipes and extra information on balancing hormones and exercise.

I have lost twenty-five pounds on this diet and beyond that I have seen my headaches, depression, sugar/carb cravings all leave. I have more energy, and when I'm faithful to the diet my body feels "clean" for lack of a better word. Every night I have a piece of my fudge - guilt free - before I go to bed.

Lots of men are using this diet as well to lose weight.  For years my husband's weight had been steadily climbing. Just by eating this way part-time we have seen the upward climb stop. He's struggling to lose weight but I know that's because he doesn't follow the diet much. I'm just happy he's stopped putting on weight.

This diet in its variations is safe for pregnant and nursing moms as well. For most of my baby's life I've been eating this way, and he's gone from ten pounds at birth to nearly thirty pounds thirteen months later. I have never felt deprived on this diet. I wake up hungry, of course, after nursing all night long, but then I have a huge, plan-approved breakfast starting the day off right.

My teenage daughter has joined me off and on and enjoyed the diet as well. She's learned new ways of cooking/baking and new ways of thinking about food and food groups. Unfortunately, she loves the fudge as much as I do. It's hard to share.

Check out their Facebook page. There are also group pages on  Facebook where you can get support. The book in all of its various forms can be purchased here. I originally bought the PDF, but eventually  knew I needed the paper copy. There's just something about being able to read a book whether or not your computer is on - just saying.

If you have any further questions,  please ask and I'll do my best to answer.

A Productive Afternoon

I like to read about other people's lives. I enjoy posts that give me a peek into what someone else has been doing. I'm guessing at least some of my readers are the same so I thought I'd give you a peek into my afternoon yesterday.

I had a lot of baking but I wasn't feeling that great so I had a nap first. I didn't get going until after 3:30. First I had to make a list - I love lists remember - of what I needed to do. Here's my list...
  • bread
  • sourdough bread
  • meat for supper
  • chicken broth
  • grape nuts cereal
  • dessert? (not sure if I was going to do this)
3:36 - finished my list...time to start

3:37 - children decide to go play in the snow so I stop what I'm doing to dress my toddler (I was actually glad they wanted to go out because the house was quiet and they were burning off excess energy in a non-irritating way ☺)...then the phone rang...take a pencil case and its contents away from the baby

activating my yeast with warm water and honey
3:45 - try again...start the wheat mill going with six cups of spelt...take a picture of the baby watching his siblings outside...start my sourdough...start proofing the yeast for my yeast bread

3:57 - the phone is ringing again and I search frantically because I never put it down in the same place twice

3:59 - decide I better have a tea to get me through this

4:06 - finish mixing up my sourdough bread...I won't need to do anything else with it until tomorrow

4:07 - start mixing my bread...As an aside, why am I making two kinds of bread? I need bread tonight and the sourdough won't be ready until tomorrow. Also, the sourdough only makes two loaves which will be gone in a blink and my regular recipe makes four loaves which will last a tch longer.

4:10 - more pictures of the fun outside

He's wearing the leg warmers I made.
4:16 - finished kneading my bread and set it aside

4:19 - time out to change the baby's diaper and nurse him. I enjoy my tea while he's nursing and may or may not have played a couple of rounds of Candy Crush also. ☺

4:42 - the phone again

4:49 - finish my tea and start mixing the grape nuts cereal. My husband loves plain cold cereal that he can share with the baby. This fits the bill, but it could be jazzed up with fruit or coconut or nuts (or chocolate chips - just saying)...the phone again - my dad this time.

5:00 - the cereal is ready to be baked...punch down and flip my bread dough over

5:02 - finally decide that yes I will make dessert...brownies...a double batch with walnuts and chocolate chips added

much later- the finished product
5:05 - my teenage son agrees to chop up the stewing beef so we can use it in spaghetti sauce...we use the food processor for this

5:12 - the meat is ready

5:21 - the brownies are ready...phone rings...another nursing break...call my teenage daughter from her bedroom because she offered to make supper

5:38 - nursing the baby again...it's just that time of day when he wants to nurse a lot...the bread needs to go in the pans now for the final rise

5:43 - bread is in the pans...wash some more dishes

5:48 - put the chicken broth I made two days ago into Ziploc bags prior to putting them in the freezer

my method for holding the Ziploc bag so I can fill it
5:57 - call my second son to take the chicken broth to our freezer in the basement

6:01 - supper is ready

So I now have six loaves of bread (in various stages of readiness), cold cereal, supper, brownies, and enough chicken broth for six meals. Not bad for a couple of hours of work. It feels good to get a bunch of stuff done all at once.

Do you ever do a bunch of stuff all at once in your kitchen?

English Muffin Bread to the Rescue Again

I have to say - the fun has not stopped around our house. Just as we're all more or less recovered from the flu my oldest son woke up this morning with some mysterious rash all over his back and spreading rapidly. This was only my husband's second day at his new job so guess who was elected for the hospital run? We woke the baby up and once again I was thankful I breastfeed because it was one less thing to get ready.

The doctor couldn't really help us as to cause just gave us a prescription and sent us home. The medicine made my son drowsy so he slept it off the rest of the morning. My toddler had continuous meltdowns because he does not handle change well and his whole life was upside-down when he woke up. So my morning was a write off.

After nap time I was going to make bread, but now it's the baby's turn to fuss. The house is a mess since everything was switched up this morning so I need to clean it. BUT we really need some bread. English muffin bread to the rescue once again. Here is my original post with the recipe and directions. I love this bread. I can make four loaves in about half the time of regular bread, and it's very tasty and simple. You only need flour, water, yeast, honey and salt. It's my go-to bread when I need lots of bread in a short amount of time. Of course, short is relative. It still takes a little over two hour from start to finish, but that's about half the time of my regular bread.

What is your favourite comfort food that you go to for something nutritious and filling?

Staying Healthy and Warm

Most of my children have been taking turns being sick this week. Between that and a special project I'm working on for someone's birthday I haven't had much time for anything else this week. Therefore I don't have much to say about this week.

I can say I'm thankful for the excellent supplements we take. They are from a company called Youngevity. We've taken them for over eight years now, and I'm convinced that they are the reason we don't get sick more often. When we do get sick it doesn't seem to be as bad as though around us. We've also started buying our essential oils from them. The more I learn about using essential oils the more I want to use them. We're not opposed to doctors because there is a time and place for them, but the more often we can heal ourselves by natural measures the stronger our bodies will be.

Yesterday I had to walk to the mall and it was quite cold out. We had a good test run of the leg warmers I made for the baby and the shawl to wrap around us. I meant to get a picture when we were all bundled up but forgot. I'm sure we'll do it again this winter, and I'll get a picture up so you can see how toasty warm he looks. ☺

Next week we should get back into the full swing of things. My husband's vacation will be over. Everyone will hopefully be healthy. I have lots of things my children want me to do with them this winter like teaching my youngest daughter how to bake muffins, my middle daughter to sew clothes for her doll, play a really awesome World War II game with my older boys and a Lego game with my younger boys.

Tomorrow we have a birthday - actually two. My son will be six and my niece will be six. How cool is that? My sister and I had babies - totally unplanned - on the same day. We also each have a daughter who share a birthday in November although separated by six years - again unplanned of course. Then my other sister didn't want to be left out of the fun so her last baby was born on the same day (different year) as my toddler. Do you have anything like that in your family? My middle daughter missed her dad's 40th birthday by an hour and a half. ☺

How has your week been this first full week of the new year?

A Good New Year 2014

We had a wonderful day together as a family. We exchange gifts at New Years and not Christmas so the excitement was pretty high around here while we were waiting for Grandpa and Grandma to get here. We make a lot of our gifts so December is a very busy time for us making things. My middle daughter and I really nailed the gift we made for my oldest daughter - a French cockade. She is a HUGE Les Mis fan so she loved this gift. My daughters also made a fishing game for our toddler that he is really enjoying. It's so much fun to see things you made being used and loved.

I've been thinking a lot about what I would like to accomplish in 2014. I would like to really get sourdough baking learned. I've played around with it, but I want to thoroughly learn it this year. I would also like to learn how to use herbs and essential oils for our family's health. I would like to use my dehydrator more. I have an Excalibur and really enjoy using it whenever I get it out.

I'm also thinking of topics I'd like to cover here on the blog. I'm coming up to a year on the blog and have enjoyed doing it. I still feel like a newbie. I enjoy reading the comments especially if something I have written has been a help or encouragement to someone.

So is there anything you would like to see me talk about? What are your goals for this year?

When the Lights Went Out

I know I've been missing in action all week and not just because of the holidays. Perhaps you heard on the news about the ice storm in southern Ontario, Canada? Well, we were right in the middle of that. We lost our power for almost 48 hours and consider ourselves blessed because six days later some people still don't have their power back.

Thanks to a husband who enjoys camping and being prepared for emergencies we managed fairly well. We were able to cook hot meals. A hot meal is so morale lifting. The bonus for me was that my husband did all the cooking just like he does when we camp. For the first day our house stayed fairly warm - it's a good house that way. The second day was definitely cooler but living in a century farmhouse for several years when my children were younger taught me a few tricks for dressing children so they stay warm but don't feel like they can't move. I was able to make good use of the leg warmers I recently made for the baby. We also found that ten bodies in one room with a few candles on keeps everything quite warm.

My toddler kept asking whose birthday it was because we had candles out. ☺

About thirty hours in we lost our hot water. My husband and I had managed to get showers, but my teenage daughter was longing for one. We called up friends who still had power and went to their place where our five oldest had showers. It was so nice to sit in warmth and light. Two hours after we came home our power came back on and there was great rejoicing.
watching a movie on a battery-powered laptop
It was an interesting experience, but I feel like I've been in recovery all week. Catching up on laundry and other tasks that I wasn't able to do for two days. I started a knitting project because I couldn't sew. There is something about the feel and sound of knitting needles clicking away and the yarn slipping over the needles. I find knitting to be a very peaceful hobby.

I've also been busy the past couple of days baking "cold" cereal. I have a couple of different recipes that you bake and then crumble up. They can then be served with milk like cold cereal or used as a topping on yogurt or applesauce. They can be frozen and eaten straight from the freezer without seeming like they're frozen.

So that has been my week - crazy and upside down but we made it through. I hope you had a great time with your family during these holidays.

Are you prepared for the power going out in your home?

Muffins and Macaroons

It's been fairly quiet around here this week. Well, it was noisy yesterday morning because we had friends come over for breakfast (it's fun to switch up the meal you have company for), and they have five boys (ages 1-7). So, yes, it was a little on the noisy side for a while. The baby slept blissfully in the middle of all the chaos - the joys of being the 8th. By the way, we did a super easy menu. We made one dozen of four different kinds of muffins the day before. All we had to do when we woke up in the morning to get ready was set the table and cook the eggs (two dozen). No muffin made it to lunch. ☺ Muffins are a fairly easy food for budding cooks to learn to make.

Other than that we've been working on gifts for each other. We don't celebrate Christmas, but we do exchange gifts at New Year's. As much as possible I try to get my children to make all of their gifts for each other. It can be a bit challenging, but I feel like the skills they learn make the effort worth it. I'm also trying to find times when the children are occupied to make my gifts for them. The good thing is that with the little ones I can still do their gifts in front of them. Even so I've only done two gifts so far so I need to get cracking.

My husband loves having a macaroon with his coffee when he goes through the drive-thru. I was sure that I could make a reasonable copy and save him some money. I put a request out on Facebook on the "Trim Healthy Mama" group and had a prompt response with this recipe. My husband said it's not exactly the same, but he likes it. So now I can save my husband some money plus know that all the ingredients are good.

The baby is getting very proficient in his walking. It's so cute to watch him swagger proudly across the floor and then fall smack on his bum. He's 27 pounds now so I really need him to walk. He's our biggest baby for sure but, oh so cute.

Those cheeks are just so squishy and beg for kisses.

How was your week? I'm sure you're busy. I hope you're having fun with your family and making wonderful memories.
